Italian Sausage and Lentils with Spinach and Mushrooms

I need to begin by telling you something. I just have to get it off my chest. This recipe came about by accident. It was a happy accident.

It was one of those nights where all of my well thought-out dinner plans were tossed out the window due to unforeseen circumstances. A rain storm, some traffic, a dying fridge. Everything contributed. Somehow though, things fell in to place.

I often keep some precooked protein as a starting block on hand. Be it tofu, seitan or some cooked beans. I had a few cups of cooked French Green Lentils. Further back on the fridge shelf, I noticed a package of Italian Sausage flavored Tofurky. Double score! I was doing better than I thought.

It being a chilly and rainy day, my older daughter had a special request for some lentil soup. While I patiently explained that I didn’t have time for soup making, I assured her that the lentils would work well for dinner and that dinner could be on the table in less than a half hour.

I began by sauteeing some onions and garlic in olive oil. I then added the faux sausage to brown. After, I added some sliced Baby Bella mushrooms along with the lentils and some herbs. It started to smell pretty good in my kitchen.

I then added some canned, diced tomatoes to the mix along with the spinach, and I was just about ready to serve.

My kids ate this over some mini-penne pasta, while I had it as-is. I hope you enjoy this dish as much as I did.

Italian Sausage and Lentils with Spinach and Mushrooms

Ingredients
  • 1 tbsp. olive oil
  • 1 onion, chopped
  • 5 cloves garlic, chopped
  • 1 package of Italian Sausage Tofurky or 1 pound of your favorite Italian Sausage, sliced
  • 8 oz. Baby Bella mushrooms, sliced
  • 2 cups cooked French green lentils
  • 8 oz. baby spinach
  • 2 tbsp basil, chopped
  • 1 tbsp. oregano, chopped
  • ½ tbsp. salt
  • 2 tsp. fresh ground pepper
  • 1 can diced tomatoes (I liked the kind flavored with garlic and basil)
  • additional salt and pepper to taste
  • 2 tsp. red pepper flakes (optional)
Instructions
  1. Heat up the saute pan for a few minutes. Add in the olive oil.
  2. Add in the onions and garlic and saute for a few minutes.
  3. Add in the sliced sausage and cook for about 5 minutes.
  4. Add in the mushrooms and cooked lentils. Cook for another 5 minutes, stirring until mushrooms have softened.
  5. Add in the canned diced tomatoes and the spices. Cook for two minutes.
  6. Stir in the spinach until wilted.
  7. Taste the mixture.
  8. Add in additional salt and pepper as needed.
  9. Enjoy!

 

 

 

Yummy Soy Sausage

A staple in our house is fake meat…soy and otherwise. I like the versatility of the fake meat products…and in the words of my 7-year-old, “I don’t want to be fleishig.”

On any given Monday night, dinner can be a rush. The buzz of the beginning of the week and crazy schedules make meal planning tough. The presence of the soy meat options are very helpful. Making dinner can be easy.

Dinner was Veggie Italian Sausage with a Mushroom and Tomato Saute over Pasta. I used gemelli, but any pasta can be used. I just like to use fun shapes. I used Trader Joes brand veggie sausage. I have seen other brand out there. Lightlife and Field Roast brands both offer similar tasty treats.


Italian Sausage, Mushrooms, and Tomato over PastaIngredients

1 box of pasta – any shape will do
1 onion
5 cloves of garlic, chopped
2 Italian Soy Sausages, more if feeding a larger crowd
1 can of diced flavored tomatoes
salt and pepper

Basil – fresh if you have it
Parmesean Cheese

Start by sauteing one chopped onion with 5 chopped cloves of garlic in some olive oil. Slice up two sausages thinly. Add it to the pan. Add in some sliced baby bella mushrooms, salt, pepper, and some basil. Use fresh basil if you have it. Next, add in a can of crushed tomatoes. I like the italian balsamic tomato flavor.

Spoon the mixture over some cooked pasta. Grate some parmesean cheese over it. This dish was wonderful and filling. Goes great with some steamed veggies or a green salad.

Zucchini and Mushroom Saute over Couscous

I came home from work, picked up the kids, and took said kids to swim lessons – with a dinner plan in mind. The plan was to dine one a yummy salad, some grilled chicken, and some sushi rice. It was a Monday. Things can never go as planned. I opened the fridge and saw that the chicken was still frozen, popsicle frozen. It was already 7pm. I had about five minutes before my six-year-old would self-combust with screams of “I’m Hungry!” I had to do something. I offered tuna or salmon salad. She would have none of it. I found some baby hot dogs. I grilled them up with some onions and served them to her with some ketchup, sliced cucumbers and tomato, and some baby dill pickles.
Now what was I going to eat? Eyeing the fridge and the pantry, I came up with a concoction that was tasty and met the task at hand.

Monday Rushed Dinner – Served over some whole wheat couscous

3 shallots, chopped
3 garlic cloves, chopped
½ large zucchini, diced
1 yellow squash, diced
5 Baby Bella mushrooms, sliced
1 Veggie Italian Sausage by Lightlife, diced
½ cup of cooked or canned cannellini beans
2 plum tomatoes, seeded and chopped
½ cup of vegetable broth
Chopped Fresh Basil
Chopped Fresh Thyme
Olive Oil
Salt
Pepper

 

Sautee the shallots and garlic in olive oil. Add in the Zuchini and squash. Add the “sausage.” Add the rest of ingredients. Cook it on medium heat for 15 minutes. It mushes up a bit. The broth gives it some sauciness.
I served it over couscous, but it would be just as good over rice or pasta even. Enjoy! Have a good week!
