Happy National Grilled Cheese Day! Now this is a holiday I can get behind every year. Grilled cheese is definitely one of my all-time favorite comfort foods out there. From my loaded grilled cheese to my grilled cheese with pears and caramelized onions, this is one sandwich that truly has a place in my heart. So when the folks over at Rumiano Cheese sent me some coupons for this momentous foodie holiday, I had to oblige.

When I was out picking up the cheese at Whole Foods, I picked up some Upton’s Italian Sausage seitan. I had a hunch that the cheese would pair well with the seitan and I was right.

I set out to make this amazing sandwich. It’s a special occasion, so I had to go full steam ahead, right?

I sautéed up some onions and cremini mushrooms along with the seitan.

I then buttered up a skillet and also buttered two slices of bread. I piled the bread with cheese and then the onion/seitan mixture and then more cheese. Topped with a piece of bread, and then in to the pan it went.

Whoa Nelly. I birthed a grilled cheese baby. And it was good.

The Monterey Jack from Rumiano was the perfect match for the onions, mushrooms and seitan. I love how all the flavors stand out in the sandwich.

Italian Sausage & Monterey Jack Grilled Cheese

Ingredients
  • 1 tbsp. olive oil
  • 1 onion
  • 8 oz cremini mushrooms, sliced
  • 1 package of Italian Sausage flavored seitan
  • Butter
  • Bread (2 slices per sandwich)
  • 1 brick of Monterey Jack Cheese, sliced up
Instructions
  1. Heat up some olive oil in a pan.
  2. Add in the onions and cook a few minutes. Add in the mushrooms and seitan and cook until cooked through and liquid has evaporated. Sprinkle with salt and pepper. Set aside.
  3. In a separate pan, heat up some butter.
  4. Butter Slices of bread and make sandwiches, piling cheese then filling then more cheese.
  5. Grill in pan until brown on each side and cheese has melted.
  6. Serve.
  7. Enjoy!

Cheddar Sriracha Stuffed Mushrooms: Stuffed Cookbook Review & Giveaway

I’ve been following Dan Whalen’s blog, The Food in my Beard, for a while now. I love the way he approaches comfort food. He brings excitement and flavor to our everyday dishes. When I heard about his new cookbook coming out, I knew I had to have it.

The cookbook, Stuffed: The Ultimate Comfort Food Cookbook is genius. Pure genius. I love amazing stuff wrapped in more amazing stuff! I mean who doesn’t? Kind of similar to where I went with my kimchi dumplings. This cookbook features dishes inspired by all ethnicities. From tamales to eclairs, this cookbook has it all. It even has homemade tater tots that totally rival my nacho stuffed tots! I mean, how can you beat fish & chips tater tots? That’s just brilliant!

When the book arrived at my door, I couldn’t open the package fast enough. I knew from Dan’s blog that he dreams up amazing flavor combinations. This book just solidified my stance. Every recipe in the book looks like something work making. The Aloo Gobi Samosas are totally happening in my kitchen soon, as are the Chana Masala Stuffed Grape Leaves.

I’ve been on a bit of a Sriracha kick lately. Well, I’ve always been a fan of it, but it seems to really be getting in to everything I made lately. Cheddar Sriracha Stuffed Mushrroms

Ingredients
  • 15 to 20 Baby Bella or Cremini Mushrooms
Filling:
  • 1 cup crushed tortilla chips
  • 1 cup shredded cheddar cheese
  • ½ cup Sriracha
  • 1 shallot, minced
  • 2 jalapenos, minced (seeds removed to ease up heat)
Instructions
Make the Filling:
  1. Mix all the ingredients in a bowl
Stuff It:
  1. Clean the mushrooms and remove and the stems and ribs. Generously stuff the mushrooms with the filling.
  2. Put the mushrooms on to a baking dish
Cook It:
  1. Preheat the oven to 400. Roast the mushrooms for about 15 minutes. Serve hot.

Nacho Stuffed Tater Tots

This month’s Kosher Connection challenge is all about the Superbowl. What kinds of snacks do you like to eat while watching the big game? On Superbowl Sunday, we typically dine on a variety of appetizers. Last year, I vaguely recall a mix of onion rings, french fries, chicken wings and beer. I’m sure there was more to it though. This year, I’m all about finding good vegetarian snacks for the big game day.

I asked my husband what he was in the mood for this year. The first thing that he came up with was some loaded nachos. I told him that nachos were too basic and we had to do better than that!

I’ve been wanting to make some homemade tater tots for a while now. A while back, there was an article by Mark Bittman in The New York Times where he showed how to make some homemade tots. I’ve been wanting to make that recipe ever since it came out. I decided that I could stuff the tater tots with some of the typical nacho toppings.

Would it work? Would it taste good? I had to find out!

I parboiled some Idaho Russet Potatoes and then grated them along with some onions. I added some salt, pepper and corn starch to the mix, as Mark Bittman suggests.

I processed some black beans along with some fire roasted green chiles in the food processor. I mixed up that mixture with some cheese, corn and chili powder.

I placed some of the potato mixture in the palm of my hand and then a dab of the bean mixture at the center and formed it in to a traditional tater tot shape, making sure to cover the entire center with potato.

I fried each tot lightly and then drained it and finished cooking it in the oven. It’s best to finish the baking process on a rack over a baking sheet.

I dipped the tater tots in a salsa-yogurt mixture.

The verdict? Definitely a fun recipe!

Nacho Stuffed Tater Tots

  • 5 Idaho Russet Potatoes
  • 2 tsp. salt
  • 2 tsp. ground pepper
  • 1 tbsp. corn starch
  • ¼ cup corn
  • ¼ cup black beans, cooked and drained or canned
  • ¼ cup fire roasted green chiles
  • 1 tbsp. chili powder
  • 1 cup shredded cheddar cheese
  • oil for frying
  • additional salt and pepper as needed
Instructions
  1. Preheat the oven to 400
  2. Parboil the potatoes until tender
  3. Grate the potatoes in a large mixing bowl
  4. Stir salt, pepper and corn starch in to the potatoes
  5. In the food processor, process together the black beans, chili powder, cheese and chiles. Stir in the corn. Transfer to a small mixing bowl.
  6. Take a tablespoon of the potato mixture and place in the palm of your hand. Dab a teaspoon of the bean/cheese mixture and place in the center of the potatoes. Shape the potatoes around the bean mixture and form in to a traditional tater tot mixture. Repeat until you have used up your potatoes.
  7. Heat up the oil, about a 1-inch deep, in a fry pan.
  8. Pan fry the tots until browned.
  9. Transfer the tots to a baking sheet lined with a cooling rack.
  10. Bake the tots until desired crispness.

Creamy Tomato Soup & Loaded Grilled Cheese

This month’s Kosher Connection link-up is all about comfort food. I had a hard time decided just which food I should share with you. I decided to share with you a food and a memory that brings comfort to me. I have several defining food moments of my life. Many of them revolve around lazy Sundays with my family. My parents would both be cooking in the kitchen and my sisters and I would be running from room to room taking in the delicious smells, and probably engaged in some sibling rivalry.

Sundays were days filled with a bustle of activity. Our days were spent running from swimming to pottery to theater at the JCC, and then home for a warm supper around the family table. One of my dad’s specialties is a loaded grilled cheese sandwich. My sisters and I would gobble that sandwich up.

This grilled cheese was never just standard white bread and American cheese. It was always filled with surprises. Some days it would be tomato and onion within the gooey cheese. Other days, we might find a sprinkling of sunflower seeds hidden inside. We always enjoyed it.

Later in college, whenever I was in the mood for that taste of home,  I would order up a grilled cheese sandwich. Like during my childhood, it always had stuff in it. It was often filled with provolone, onions and mushrooms. On a rainy day, I would add a cup of soup to the meal. I learned to love creamy tomato soup on those rainy New York days. Dipping a corner of grilled cheese in to that soup and chowing down – that spelled out a bit of heaven.

I thought I’d share this fabulous meal with you today.

Creamy Tomato Soup

Ingredients
  • 1 tbsp. olive oil
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 2 carrots, chopped
  • 5 cloves garlic, chopped
  • 1 tbsp. fresh basil, chopped
  • 1 tbsp. fresh oregano, chopped
  • 1 tbsp. fresh thyme, chopped
  • 2 tsp. salt
  • 2 tsp. ground pepper
  • 1 - 28 oz. can of roasted tomatoes
  • 5 cups vegetable broth
  • ½ cup half & half
  • additional salt and pepper to taste
Instructions
  1. In a large soup pot, heat up the olive oil on medium-high heat.
  2. Add in the onions, celery, carrots, garlic and herbs.
  3. Cook on medium-high for a few minutes until the onions begin to soften.
  4. Stir in the canned tomatoes.
  5. After a couple minutes of cooking, add in the vegetable broth.
  6. Let the soup come to a boil and then turn down the heat to medium low and cover the pot.
  7. Let the soup simmer covered for about 45 minutes.
  8. Check on the soup. The carrots should have softened.
  9. Puree the soup with an immersion blender.
  10. Stir in the half & half.
  11. Taste the soup and adjust seasoning.
  12. Serve and enjoy!

Loaded Grilled Cheese

Serves: 2 sandwiches
Ingredients
  • 1 tbsp. butter
  • ½ tbsp. olive oil
  • 1 onion, sliced thinly
  • 1 tsp. salt
  • 1 tsp. ground pepper
  • 3 cloves garlic, chopped
  • 5 cremini mushrooms, sliced thinly
  • 3-4 slices cooked veggie bacon, optional (or the real bacon!)
  • 4 slices of your favorite hearty bread
  • 2 slices Provolone cheese
  • 2 slices Cheddar cheese
  • 2 slices Swiss Cheese
  • Butter for grilling the sandwiches
Instructions
  1. Heat up the butter and olive oil in a saute pan.
  2. Once the butter has melted, add in the onions. Turn the heat down to medium-low. Cook the onions slowly until caramelized. About 15-20 minutes.
  3. Once the onions begin to caramelize, add in the garlic and sliced mushrooms. Let those cook and soften as well.
  4. Remove from heat once onions are done and set aside.
  5. Cook the veggie bacon or regular bacon in a pan or in the oven or per directions on the package. Set aside.
  6. Make the sandwich. Place a slice of provolone on the bread slice and then layer the onions and mushrooms then cheese then bacon then more cheese and then the other slice of bread.
  7. Butter the outside of the bread.
  8. Grill in a fry pan over medium-high heat until brown on both sides and the cheese is melted.
  9. Serve and enjoy!

 

Tomatillo Quiche

I joined an organic co-op this year, and I’ve been loving all of the wonderful fruits and vegetables I am getting. It forces me to get more creative and try new ideas.

Last week, I got a bunch of tomatillos in my vegetable share. In the past, I’ve turned them in to salsa verde for enchiladas. I wanted to try something different this time.

Like other nights, I looked to my pantry and fridge for ideas. I seemed to have a surplus of organic eggs from my co-op, and I also had some cheese on hand. I knew I could turn this in to a quiche in no time.

I washed and sliced the tomatillos along with some bell pepper, onion, garlic and cilantro. I then sauteed the mixture.

I happened to have some pie crusts in the freezer. I added the cheese to the bottom of the pie crust, then added the veggie mixture, then poured over the egg mixture. In to the oven it went.

It came out perfectly.

I love the bite of the tomatillo. It has a strong, slightly acidic flavor. It works well with the other flavors in the quiche. I highly recommend this for your next dinner.

Tomatillo Quiche

Ingredients
  • 1 tbsp. oilve oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 6 tomatillos, chopped
  • 3 cloves garlic, chopped
  • 2 tsp. ground black pepper
  • 3 tsp. salt
  • 2 tbsp. chopped fresh cilantro
  • 4 eggs
  • 1 cup half and half
  • 9" Deep Dish Pie Crust
  • ¾ cup shredded cheese (I used a mixture of cheddar and monterey jack)
  • additional salt and pepper as needed
Instructions
  1. Preheat the oven to 375.
  2. Heat up the oil in a large saute pan. Saute the chopped veggies and spices for about 7 minutes, until softened.
  3. Beat the eggs with the half and half in a small mixing bowl.
  4. Sprinkle the shredded cheese in the bottom of the pie crust.
  5. Place the veggie mixture over the cheese.
  6. Pour over the egg mixture.
  7. Place the pie tin on a baking sheet and place in oven. Bake for around 35-40 minutes, until the egg has completely set.
  8. Cool for about 5-10 minutes before serving.
  9. Slice and enjoy!

Corn & Cheese Fritters with Pear Salsa

I love being a part of this fantastic group of food bloggers, the Kosher Connection. Each month, we are challenged to cook up some wonderful and unique foods. Each link-up is fun and new. I love seeing the assortment of goodies that the group comes up with. This month was especially difficult. We were tasked with a Chopped style challenge. Like the popular Food Network show, we were given three ingredients to build our dish around. For the most part, we had free reign, but the dish had to include canned corn, pears and Mike & Ike candies.

I had a very hard time coming up with something for the dish. Creating something that involved all three ingredients was super tough. I had initially planned a tofu dish that included a Korean pear based sauce. My husband nixed the idea in favor of something fried. He urged me to make a fritter. I don’t really like frying things, but with Chanukah coming up next month, I decided that if this worked out, it would be perfect for Chanukah. It’s traditional to have fried foods to recognize the miracle of the oil in the ancient temple.

He suggested some sort of latke, but as I brainstormed a bit, I settled on a fritter. I know, not that far off. But there is a difference. I scribbled a slew of ideas on paper. Once I had the house to myself though, I got to work. I settled on a corn and cheese fritter when I saw a brick of pepper jack cheese sitting in the fridge. I  quickly picked up a carton of buttermilk at Trader Joe’s and worked out a quick fritter recipe.  The fritters did not disappoint!

I mixed up the canned corn with the cheese, some chopped onion, spices, buttermilk, eggs, flour and baking powder.

I scooped them up and fried them in a couple of inches of hot oil.

I then drained the fritters on a cooling rack with paper towels underneath.

Incorporating the Asian pears and the Mike & Ike candies proved more challenging. I wanted a pear chutney to dip the fritters in to. I peeled and chopped up the asian pears and began cooking them down with some ginger and water. I also added the Mike & Ike candies to let them get infused with the candy flavor. When tasting the sauce, it was definitely too sweet. I knew that it needed something savory along with some heat.

I added some chopped jalapeño, onion and vinegar and cooked it a bit more. Once everything was softened, I pureed the mixture with my immersion blender.

While the pear and Mike & Ike salsa isn’t perfect, it’s getting there. I call it a work a progress. To be honest, I will leave the candies out the next time I set out to make this dish. It was definitely fun to try my hand at this though.

The fritters have gone on the short list though and will definitely be made next month for Chanukah. The crunch and light outside and the creamy cheese filling. One word. Amazing! Make them now!

Disclaimer: The pear salsa was made as part of the chopped style challenge. I highly recommend you make the fritters. The fritters are amazing.  I’m not quite sold on pear salsa with mike & ike candies. I do recommend a pear salsa without the candy!

 

Corn & Cheese Fritters with Pear Salsa

Ingredients
Corn & Cheese Fritters
  • 1 can whole kernel white corn, drained
  • ½ red onion, chopped
  • 1.5 cups pepper jack cheese, shredded
  • 1.5 cups all purpose flour
  • 2 tsp. baking powder
  • 1 cup buttermilk
  • 2 eggs
  • 2 tsp. pepper
  • 1 tsp. salt
  • oil for frying


Mike & Ike infused Pear Salsa
  • 2 asian pears, peeled and cubed
  • ½ red onion, chopped
  • 1 inch ginger, chopped
  • ½ jalapeno, minced
  • 2 tbsp. water
  • 2 tsp. salt
  • 3 tsp. red wine vinegar
  • 2 tsp. ground pepper
  • ½ cup Mike & Ike candies (I used two of the fun size boxes) - optional
Instructions
Corn and Cheese Fritters
  1. Mix all of the fritter ingredients, except for the vegetable oil, in a mixing bowl.
  2. Heat up about 2 inches of oil to 350 in a heavy bottomed pan or pot.
  3. Scoop a couple of tablespoons of fritter batter. I used an ice cream scoop. Drop in the hot oil and fry about a minute or two per side. Flip the fritter when browned.
  4. Transfer fritter to a cooling rack placed over paper towels to drain and cool
For the pear salsa
  1. Peel and chop up the pears
  2. Place in a saucepan with the water, ginger and the mike and candies.
  3. Add in the onion, jalapeno, vinegar and spices.
  4. Allow mixture to soften.
  5. Once softened, blend with an immersion blender.
  6. Taste and adjust seasoning as necessary.

Spinach and Beet Salad with Goat Cheese

I never used to be a salad person. I would eat it and enjoy it, but I never really sought it out or really appreciated it. It wasn’t until I couldn’t eat salad that I started to crave it and get more creative with salad. Crohn’s has kept me away from raw vegetables on and off at different spurts in my life. So here I am now, Crohn’s free, and taking full advantage of this lull in my life. Summer has come on with full force and with that, we have some beautiful veggies showing up in the markets. Baby spinach is one of my favorite greens. You may have noticed that it shows up in some of my favorite dishes.

Since it’s summer time, I like to eat more fresh dishes that don’t require heating up the house.

I think it was my sister that introduced me to this Spinach and Beet Salad with Chèvre and Walnuts. I ate it on one of my visits back home to Minneapolis. Since then, I order this salad on whatever menu I see it on. I decided to make it myself. I had recently received some beautiful beets in the CSA and I had everything else in the fridge.

The spinach I used in this salad was prewashed and ready to go. I roasted some beets and I toasted some walnuts in the oven.

I served the salad with a red wine, basil  and shallot vinaigrette that I quickly whipped up in my Cuisinart Mini-Prep processor.

Spinach and Beet Salad with Goat Cheese

Serves: 4
Ingredients
  • 1 small bunch of beets (about 4-5 small beets)
  • 1 bag of pre-washed baby spinach
  • 1 cup walnuts
  • 1 small red onion, sliced thinly
  • 1 tbsp. olive oil
  • sea salt
  • fresh ground pepper
  • goat cheese (Chèvre)
Instructions
  1. Preheat oven to 375.
  2. Trim off the ends of the beets and place in foil. Sprinkle olive oil over the beets and sprinkle with salt and pepper. Wrap in the foil.
  3. Roast the beets in the oven for about 40 minutes.
  4. Remove from oven and cool.
  5. While the beets cool, place the walnuts on some foil and toast in the oven for about 5 minutes.
  6. Remove from oven and cool.
  7. When cooled down, slice the beets thinly.
  8. Layer the salad - first the spinach, then the beets, then the onions and walnuts, then the goat cheese.
  9. Sprinkle on a dressing of your choice. I would recommend a red wine vinaigrette.

 

Red Wine, Basil and Shallot Vinaigrette

Ingredients
  • 1 shallot
  • 2 cloves garlic
  • 15 basil leaves
  • 5 tbsp. red wine vinegar
  • 2 tbsp. honey
  • ½ cup olive oil
  • 2 tsp. sea salt
  • 2 tsp. fresh ground black pepper
Instructions
  1. Place everything except for the olive oil in to the food processor.
  2. Start blending the mixture.
  3. Slowly pour in the olive oil and let the mixture emulsify.
  4. Transfer dressing to a container.
  5. Enjoy on your favorite salad.

Mushroom and Leek Savory Bread Pudding

A few years ago, I had some random chunks of bread that were taking up space in my freezer. I had company coming over and it occurred to me to turn that leftover bread in to a casserole or bread pudding of sorts. I am not a big fan of sweet bread puddings, so the savory version seemed like the right course of action.

The bread pudding was a huge hit at that brunch.

Fast forward a few years. I recently found myself planning Shavuot meals. On Shavuot, it is customary to eat dairy meals. I decided to turn back to that bread pudding I made a few years ago. We still love it and I decided to share it here.

Mushroom and Leek Savory Bread Pudding

Ingredients
  • 3 tbsp. butter
  • 1 tbsp. olive oil
  • 1 onion, chopped
  • 5 cloves garlic, chopped
  • 4 leeks, cleaned and sliced in to thin rounds
  • 15 oz. baby bella mushrooms
  • 1 tbsp. salt
  • 2 tbsp. fresh tarragon, chopped
  • 1 tbsp. fresh thyme, chopped
  • 3 tsp. ground black pepper
  • 2 tbsp. fresh parsley, chopped
  • 6 large eggs
  • ¾ cup vegetable broth
  • 2 cups half & half
  • ½ cup parmesan cheese
  • 2 cups cheddar and jack shredded cheese blend
  • additional salt and pepper
  • 1 tsp. cayenne pepper
  • 1 tsp. paprika
  • 1 tsp. red pepper flakes
  • 3 cups cubed pumpernickel bread, crusts removed
  • 3 cups cubed italian bread, crusts removed
  • olive oil spray
Instructions
  1. Preheat the oven to 350°F.
  2. Heat up the olive oil and butter in a large sauté pan.
  3. Add in the onions, garlic and leeks and sauté for about 3-5 minutes.
  4. Add in the sliced mushrooms and cook for another few minutes.
  5. Stir in the fresh herbs, salt and pepper and cook another two minutes.
  6. Cook until all of the veggies have softened. Remove from heat and set mixture aside.
  7. While the veggies cook, you can quickly prep the bread cubes and get to work on those.
  8. Spray a large baking sheet with olive oil spray.
  9. Place the bread cubes on the baking sheet and bake for about 10-15 minutes, or until the bread cubes start to brown.
  10. Remove from oven and set aside.
  11. In a large mixing bowl, mix together the eggs, broth, half and half, additional spices, half of the parmesan cheese and half of the shredded cheese.
  12. Add the lightly toasted bread cubes to the egg mixture.
  13. Stir the vegetable mixture into the egg mixture.
  14. Let the mixture sit for about 20 minutes.
  15. Pour the mixture in to a 9"x13" pan.
  16. Sprinkle over the remaining cheeses.
  17. Bake in oven for about 25-30 minutes or until pudding is set and cheese starts to bubble and brown.
  18. Remove from oven and let sit a bit before serving.
  19. Enjoy!

 

Breakfast Tostadas

I’d love to be that kind of person who uses the term “brunch” regularly. I really want it to be part of my vocabulary.  You know those people where brunch becomes a verb AND a noun in their life?

My reality is that brunch rarely happens in my life. Ever since I became a parent, I have given my mornings away to my children. I’m not complaining. I love what motherhood has given to me. I just miss my lazy Sunday mornings.  Breakfast is my favorite meal and I would love for it to be leisurely – like a brunch should be.

A few years ago, I went back home to Minneapolis, a rare trip without children – to celebrate my sister’s 30th birthday. The weekend of celebrations was amazing and ended with Sunday morning brunch at a fantastic place called Hell’s Kitchen. This breakfast tostada that I’m sharing with you today is inspired by the brunch I had there.  This breakfast is perfect hangover food, but also goes great with a mimosa or a bloody mary, or even a cup of coffee. Not that mothers should be condoning alcohol consumption or hangovers, right? Mothers do deserve some fun once in a while.

These breakfast tostadas would be perfect for a Mother’s Day breakfast. Most of the components can be prepared in advance and then you can save the egg prep for Sunday morning.  I love layered dishes like this one.

Spinach and Tofu Enchiladas Verde

Several years ago, I ate a fantastic vegetarian burrito at Benny’s Burritos in the West Village of Manhattan. Ever since then, I’ve been wanting to make something inspired by that dish. The combination of the spinach and tofu with fun spices and cheese, had a fantastic mouth feel that had me craving for something similar. I decided to turn that craving into reality with this enchilada recipe. This was a huge hit, and I wish I had doubled the recipe!

Spinach and Tofu Enchiladas Verde

Ingredients:
1 tbsp. canola oil
1 package of tofu, drained and cubed and dried
1 onion, chopped
5 cloves garlic, chopped
2 tsp. salt
2 tsp. cumin
2 tsp. black pepper
2 tsp. chili powder
6 oz. bag baby spinach
8 whole wheat tortillas
2 cups salsa verde
2 cups Mexican blend cheese – shredded

Directions:

Preheat the oven to 350.

Heat up the oil in a large pan.

Pat dry the drained and cubed tofu. Add the tofu to the pan. Fry the tofu for 3-5 minutes. Flip over the tofu and cook another 3 minutes.

Add in the chopped onion and garlic and cook for a few minutes, until soft.

Once soft, add in the baby spinach and spices and turn off the heat. Let the warmth of the other ingredients wilt the spinach.

Pour 1 cup of the salsa verde in to the bottom of a 9×13 pan.

Place a few tablespoons of the spinach and tofu mixture in to a tortilla along with a sprinkle of the cheese. Roll up the tortilla and place in the pan, seam side down.

Spinach and Tofu Enchiladas

Repeat with the rest of the tortillas.

Pour the rest of the salsa verde over the rolled-up enchiladas. Sprinkle the remaining cheese over the enchiladas.

Bake in the preheated oven for 20 minutes.
