Spicy Miso Ginger Soup with Mushrooms & Spinach

We were having a get-together with some friends and I offered to bring something over. They suggested soup. I initially thought I would do something simple like my Cardamom Cauliflower Soup or perhaps my French Onion Soup. I wanted to change things up a bit though. It’s been pretty cold around here and I’ve been craving spicy Asian noodle soups. My Bon Appétit Magazine had just arrived and I was drooling over the rice noodle soup on the cover.

Having looked through various recipes for inspiration, I decided to come up with my own vegan soup recipe. I had some miso on hand as well as shiitake mushrooms. I knew I could pull something together.

I began by sautéing up some shallots, garlic and ginger in a little bit of sesame and canola oil. As they softened, I added some cubed extra firm tofu and some sliced shiitake mushrooms, along with the whites of the scallions. I let everything sear and soften. The smell coming off the pot was amazing.

I stirred in some chili garlic paste and added some vegetable broth to the pot. I then added a strip of Kombu to the broth mixture. Kombu is a type of seaweed that adds amazing flavor to soups.

Next, I stirred in some miso and tamari to the mix. I tasted the broth a bit to see if it needed additional spice. I like heat, so I added a couple of squirts of Sriracha.

Next, I added some spinach, shredded daikon and shredded carrots. The spinach cooks up fast. At that point, the soup smelled amazing and I really wanted to dig in. I let the soup simmer for about a half hour. I then ladled in to a bowl over some gluten free soba noodles.

This soup is perfect. It’s great for these cold winter days. Add some extra sriracha if you want an extra kick.

Spicy Miso Ginger Soup with Mushrooms & Spinach

Ingredients
  • ½ tbsp. rice bran oil
  • 2 tsp. sesame oil
  • 2 shallots, chopped
  • 4 inch piece of ginger, peeled
  • 4 cloves garlic, peeled
  • 2 scallions, chopped (whites and light green only)
  • ½ pound extra firm tofu, drained and cubed
  • 10 oz. shiitake mushrooms, sliced
  • 2 tsp. chili garlic paste
  • 10 cups vegetable or imitation chicken broth
  • 1 6-inch strip of kombu
  • 2 tbsp. white miso paste
  • 1 tbsp. tamari or soy sauce (can adjust taste)
  • 1-2 tbsp. sriracha (optional, to taste)
  • red pepper flakes (optional, to taste)
  • 1.5 cups shredded carrot
  • 1.5 cups shredded daikon
  • 2-3 cups packed spinach leaves (could also use kale or mustard greens)
  • Soba noodles (optional, to serve)
Instructions
  1. Process the garlic and ginger in to a paste in the food processor.
  2. Heat up the oils in a heavy bottom soup pot.
  3. Add in the garlic, ginger and scallions and saute for a few minutes to soften.
  4. Add in the mushrooms and the tofu and saute for several minutes.
  5. Stir in the chili paste and add in the broth.
  6. Mix in the miso paste and tamari and taste the soup a bit. Add additional sriracha or red pepper flakes for extra heat.
  7. Add in the shredded veggies and spinach and cover the pot. Let the soup simmer for about a half hour.
  8. Serve over soba noodles.
  9. Enjoy!

Gluten Free Mocha Fudge Chocolate Chip Cookie Bars

Have I told you lately how much I love cookie bars? Cookie bars make my life easier. They make it so I don’t have to get a cookie scoop or an extra tablespoon dirty. I don’t have to shape anything. I don’t have to roll anything. I place the dough or batter in whatever form, in to a pan. And then I bake. It’s that simple.

Can I tell you about something else that is also amazing and makes my life easier? Prepared Cookie Dough. Gluten Free Pillsbury Cookie Dough. It comes in a tub. Whoa! It’s also amazingly delicious. Everyone who tastes the cookies that come out of this prepared cookie dough can’t believe that it’s gluten free. Pillsbury has also released a few other gluten free options. I can’t wait to try them all.

I know that I just shared some gluten free cookie bars with you made with this same dough. I had to use the dough again though. I needed to see what else could be done with it.

I decided to make another layered cookie bar. I had some sweetened condensed milk in my pantry and I’ve been meaning to make some fudge with it for a while now. I decided to make some mocha fudge to layer on to the chocolate chip cookie layer. I’ve been told that it’s super easy to make fudge using a can of the sweetened condensed milk. And it is easy. And it comes out amazing.

I preheated the oven to 350. Then, I pressed the cookie dough in to a sprayed 9×13 glass baking dish.

I baked the cookie dough layer in the oven for about 11 minutes, until I saw it begin to brown.

While the cookie layer baked, I made the fudge layer. I heated up the sweetened condensed milk in a heavy pan and mixed it with some chocolate chips. I let everything melt and and incorporate in to each other. I mixed in some instant espresso powder.

Once that mixture was ready, I poured it over the baked chocolate chip cookie layer. Holy deliciousness! I smoothed the fudge layer and sprinkled over some toffee pieces.

I made sure the pan was cool and then I placed it in the fridge to cool and set for a few hours. Then I dug in. Amazing! So rich and decadent. And super easy to make. Definitely put this on your next gluten free dessert list!

  • 1 tub of Pillsbury Chocolate Chip Cookie Dough
  • 1.5 cups Semi-Sweet Chocolate Chips
  • 1 can Sweetened Condensed Milk
  • 3 tbsp. Instant Espresso Powder
  • 2-3 tbsp. Toffee Bits (optional)
Instructions
  1. Press the cookie dough in to a sprayed 9x13 baking dish.
  2. Bake the cookie dough in the oven for about 11 minutes.
  3. Remove from oven and cool.
  4. While cookie layer bakes, prepare the fudge layer.
  5. In a heavy bottomed saucepan, mix the sweetened condensed milk with the chocolate chips and instant espresso powder. Cook over low heat until everything is melted and mixed together.
  6. Pour mocha mixture over the baked cookie dough.
  7. Sprinkle toffee bits over the mocha fudge mixture. (optional)
  8. Let pan cool.
  9. Place cookie bars in refrigerator to cool and set. Should take 2-3 hours.
  10. Slice and enjoy!

Gluten Free Oatmeal Chocolate Chip Caramel Cookie Bars

Did you know that Pillsbury has recently come out with a line of gluten free doughs? I recently came across their new line of doughs in the supermarket. I’m so glad that companies like Pillsbury have expanded to the gluten free market and their products are widely available.

Thanks to Pillsbury, I have just had the opportunity to try some of their Chocolate Chip Gluten Free Cookie Dough. I was so excited to try it! I knew that I couldn’t just roll them in to balls and pop them in to the oven. I had to do something fun with this new product.

My favorite kind of cookie is a cookie bar. Something about them just allows for more amazing things to happen. You can layer them. You can stuff them. You can add all sorts of yummy stuff to them. A cookie bar is always the way to go. My favorite cookie is typically an oatmeal chocolate chip cookie. I knew I had to do some sort of mash-up. That lightbulb moment happened where I decided to make a layered oatmeal chocolate chip cookie bar. Right away, I knew what would go in the middle of the two gluten free cookie doughs. The only option in my mind was caramel. Gooey and creamy caramel. My mouth is watering thinking about it!

I first mixed up my favorite oatmeal chocolate chip cookie dough. I used gluten free oats along with a gluten free flour blend. I slightly adapted the recipe that is on the Quaker Oats canister.

I pressed the mixture in to a sprayed 9×13 baking pan.

Next, I melted caramel bits along with a few tablespoons of heavy cream. I love the caramel bits because they melt faster than the squares and there is no unwrapping to do.

I poured the caramel over the oatmeal chocolate chip cookie dough mixture.

Next, I used my cookie dough scoop to spoon out even balls of the Pillsbury chocolate chip cookie dough. I placed them over the caramel.

I then baked everything at 350 for around 26-27 minutes. I kept my eye on the cookie bars for even browning. The cookie bars couldn’t cool fast enough. I let them cool completely before cutting.

Gluten Free Oatmeal Chocolate Chip Caramel Cookie Bars

Ingredients
Oatmeal Chocolate Chip Cookie Layer - slightly adapted from Quaker Oats
  • 1 stick plus 6 Tbsp. softened butter
  • ¾ cup brown sugar, packed
  • ½ cup sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 1.5 cups Gluten Free Flour Blend (use one that includes xanthan gum in the ingredients)
  • 1 tsp. gluten free Baking Soda
  • 2 tsp. Cinnamon
  • ½ tsp. salt
  • 3 cups Gluten Free oats
  • 1 cup Semi-Sweet Chocolate Chips
Caramel Layer
  • 1.5 cups Caramel Bits
  • 3 Tbsp. Heavy Cream
  • 1 tsp. sea salt
Chocolate Chip Cookie Layer
  • 1 tub of Pillsbury Gluten Free Chocolate Chip Cookie Dough
Instructions
  1. Heat oven to 350.
Oatmeal Chocolate Chip Layer
  1. In a mixing bowl, cream the butter and sugars together. Bean in the eggs and vanilla.
  2. In a smaller bowl, mix the flour, baking soda, cinnamon and salt together.
  3. Add the dry ingredients to the creamed butter.
  4. Stir in the chocolate chips and the oats until well incorporated.
  5. Spray a 9x13 pan and press the oatmeal chocolate chip mixture in to the pan.
Caramel and Cookie Layers
  1. Place the caramel bits and the heavy cream in a small sauce pan. Heat the pan to medium-high and stir frequently until well melted.
  2. Once everything is melted and mix well, remove from heat.
  3. Pour the caramel over the oatmeal chocolate chip mixture.
  4. Using a cookie scoop, spoon the chocolate chip cookie dough over the caramel layer.
  5. Bake in oven for around 27 minutes, until the top has an even brown tone.
  6. Cool completely before cutting. The bars will be gooey from the caramel.
  7. Enjoy!

White Bean and Kale Soup

My daughter came home from a friend’s house and excitedly told me all about the Olive Garden soup she had just eaten for dinner. I don’t think I’ve been to Olive Garden since I was about ten-years-old. I definitely didn’t remember any soup. The friend’s family knows that we don’t eat at Olive Garden and they understand that Gila is a vegetarian. After a moment of panic, I composed myself and asked her to tell me more. She happily told me about this amazing soup filled with spinach, potatoes and delicious broth. For days after, she asked me if I had made my version of the soup yet. I had just finished a marathon soup cooking session. My freezer was already bursting with various soups. I wasn’t ready to make another soup.

As they often do, circumstances change. In the middle of the work day, I quickly texted my husband and asked him what he thought I should prepare for dinner. With a groan, he told me all about his two root canals from earlier that morning and then fast forwarded to the part where he told me that all his jaw could handle was some warm soup. He told me not to worry. He assured me that he would just venture out to a local take-out place and buy something. I couldn’t let that happen. I decided that this was the night to make the soup of Gila’s dreams.

I had some kale in the fridge that needed to be used up.  I decided that it would be perfect in place of the spinach. I also had a ziploc bag of already cooked white beans in the freezer. I set off to make my version of this Olive Garden Soup. Amazingly, I was successful. Gila went to bed with a full and happy belly and Jason happily had three bowls of soup. This hearty soup is a winner and will definitely be made again!


White Bean and Kale Soup

  • 1 tbsp. olive oil
  • 1 onion, chopped
  • 4 carrots, cut up
  • 4 stalks of celery, chopped
  • 5 cloves garlic, chopped
  • 2 tsp. salt
  • 2 tsp. fresh ground pepper
  • 3 small potatoes, peeled and sliced (I used purple, but you can use your preference)
  • 1 bunch of kale, washed and trimmed and chopped
  • 2 cans of white beans, rinsed and drained
  • 1 can of diced tomatoes
  • 2 tsp. basil
  • 2 tsp. oregano
  • 2 tsp. thyme
  • 6 cups of vegetable broth
  • 3 cups water
  • Additional salt and pepper as needed
  • Soup noodles (alphabet or any variety will do) optional
Instructions
  1. Heat up the olive oil in a large soup pot
  2. Add in the onions, carrots, celery and garlic and cook a few minutes to soften.
  3. Stir in the salt and pepper
  4. Add in the kale and the potatoes and the kale and cook a couple of minutes
  5. Add white beans, tomatoes, broth and the water - along with the spices
  6. Bring the soup to a boil
  7. Turn the heat down and let simmer while covered for at least an hour.
  8. If you'd like some noodles in your soup, add them about 15 minutes before serving.
  9. Taste and adjust seasoning.
  10. Serve and enjoy!

Red Miso Braised Baby Bok Choy

This vegetable side dish was inspired by a walk through my local farmer’s market a while back. As new fresh veggies come in to the market, I get more and more excited to bring new stuff home.

I also  recently went on a shopping frenzy at my local Korean grocery store. I managed to pick up my favorite kind of miso, red miso. Red miso is a rich fermented soy bean paste that lends itself to heartier foods. It’s perfect for a braise and bok choy works well with it.

This bok choy comes together in just a few simple steps. We served this with some grilled salmon. I hope you enjoy!

Red Miso Braised Baby Bok Choy

Ingredients
  • 1 tbsp. coconut oil (you could also use peanut oil or canola oil)
  • 1 tsp. sesame oil
  • 1 shallot, chopped
  • 2 tbsp. ginger, chopped
  • 2 tbsp. garlic, chopped
  • 5-7 medium heads of baby boy choy, washed and trimmed
  • 2 tbsp. red miso
  • ½ cup vegetable broth
  • 2 tsp. tamari or soy sauce
  • 2 tsp. red pepper flakes
Instructions
  1. Heat up the oil in a large pan.
  2. Add in the shallot, garlic and ginger. Cook a few minutes to soften.
  3. Add the cut bok choy to the pan and sear on both sides - about two minutes.
  4. In a small bowl, mix the miso with the vegetable broth and the tamari.
  5. Pour miso mixture over the bok choy. Cover the pan for 2-3 minutes to cook the boy choy a little.
  6. Add red pepper flakes to taste.
  7. Remove from heat and serve.
  8. Enjoy!

Vegan Mushroom Pâté

Vegan Mushroom PateI was fasting the other day in preparation for a test, and all I could think about was bánh mì. I walked by the bánh mì cart near my office and my mouth was salivating. I decided that no matter what, I would be making bánh mì sandwiches for dinner this weekend. A while back, I made some vegan bánh mì here on the blog. From experience though, I knew it was missing something. It was missing the traditional pâté. It adds another layer of flavor to the sandwich and some needed moistness that pairs well with the other ingredients.

This time around, I knew I had to make my own baguettes AND make some pâté. Pâté is traditionally made from pork and chicken liver in these sandwiches. You all know that’s not my style. I’ve had some vegetarian eggplant liver before, but I’m the only one in this house who loves eggplant. I decided to make this amazing spread out of mushrooms and walnuts.

Then., I sautéed up some mushrooms along with some shallots, garlic, ginger and spices. The smell was already so good.

Once the mushrooms were done, I placed everything in my Cuisinart food processor and processed away.

It came together fast and made a huge difference in our bánh mì sandwiches! This would also be perfect as a dip with crackers or in place of traditional meat liver on shabbat and holidays!

Vegan Mushroom Pâté
 
This vegan mushroom pâté goes perfectly with my vegan banh mi sandwiches!

Ingredients
  • ¾ raw shelled walnuts
  • 1 tbsp. olive oil or other neutral oil
  • 2 tsp. sesame oil
  • 1 shallot, chopped
  • 5 cloves garlic, chopped
  • 1 tbsp. ginger, chopped
  • 10 oz. mushrooms - sliced
  • 1 tsp. tamari sauce
  • 1 tsp. ground black pepper
  • 1 tsp. salt
  • additional salt and pepper to taste
Instructions
  1. Heat up your skillet on medium high heat.
  2. Toast the walnuts in the dry skillet for about 3 minutes. You do not want to burn the nuts.
  3. Remove the walnuts from the pan and set aside.
  4. Keep the pan on the heat.
  5. Add the oils to the pan. Let the oil get hot.
  6. Add the shallots, garlic and ginger to the pan. Cook a couple of minutes.
  7. Add the mushrooms to the pan and cook another few minutes. Stir in the tamari, salt and pepper.
  8. Once cooked, turn off the heat.
  9. Place both the walnuts and the mushroom mixture in your food processor and process well. It should be a paste.
  10. Taste and add additional salt and pepper as necessary.
  11. Enjoy!

Vietnamese Rice Noodle Salad

Vietnamese-Rice-Noodles-SaladIt’s been crazy hot here on my part of the world. I’m trying to stay away from the stove as much as possible. I’m sure you all can relate.

I’ve been trying to come up with substantial dishes that can be served cool or room temperature that don’t require to much heating up of the kitchen. This especially applies to Shabbat, where I’m tasked with creating and serving multiple dishes for a crowd.

This Vietnamese Rice Noodle dish is a perfect example of a meal-in-a-salad that comes together quickly and is great both warm or cold. It’s also very adaptable. You can swap out some of the veggies and change the protein to whatever you prefer. For this dish, I used turkey. I knew that my guests would be looking for some kind of meat dish and I had the turkey ready to go.

I started by cooking up the rice noodles. I used the thin rice vermicelli, which I can pour boiling water over to cook. Super easy to do. After soaking for around ten minutes, I drained the noodles.

I then cooked up the turkey with some garlic, ginger, shallots and chopped shiitake mushrooms. I love the flavors that comes off of the meat. Once cooked, I added some tamari and lime lime juice to the meat directly.

I chopped up my veggies and made the dressing. I was ready to go.

I mixed the veggies with the noodles and layered the ground turkey over it and then poured on the dressing. Everyone was happy with the salad.

I also make a vegetarian version of this salad. When I do, I swap out the turkey and use chopped tofu or the soy beef-style crumbles. They work well. When I crumble the tofu, I tend to use an extra firm version and add some extra garlic, ginger and soy sauce for extra flavor.

Vietnamese Rice Noodle Salad

Ingredients
  • 1 package vermicelli rice stick noodles
  • 1 tbsp. rice bran oil
  • 4 cloves garlic, chopped
  • 1 shallot, chopped
  • 1 tbsp. ginger, chopped
  • 1 lb. ground turkey
  • juice of ½ lime
  • 2 tsp. tamari
  • 2-3 scallions, chopped
  • 2 tbsp. cilantro, chopped
  • 1 tbsp. mint, chopped
  • 2 carrots, shredded
  • ½ daikon, shredded
  • 1 red pepper, chopped or julienned
  • 1 seedless cucumber, julienned or chopped
  • 1 cubed avocado
  • 2 tsp. red pepper flakes
For the dressing:
  • juice of ½ lime
  • 2 tbsp. rice vinegar
  • 1 tbsp. brown sugar or honey
  • 2 tbsp. tamari
  • 1 tbsp. water
  • ½ tbsp. rice bran oil
  • 1 tbsp. chopped peanuts (optional)
Instructions
  1. Cook the noodles by placing them in a large bowl and pour boiling water over it. Let sit a few minutes, drain and set aside.
  2. Heat up the oil in a large pan and saute the ginger, garlic and shallot.
  3. Add in the ground turkey and chopped shiitake mushrooms and cook until done.
  4. Squeeze the juice of a ½ lime and 2 tsp. tamari or soy sauce over the turkey and mix.
  5. Prep all of the veggies and set aside.
  6. Mix up the dressing ingredients and set aside.
  7. Mix the rice noodles with the veggies and then layer with the ground turkey mixture. Stir in the whisked dressing.
  8. Serve and enjoy!

Grain Free Collard Green Burritos

I’ve been trying to make some changes in regards to what I eat this summer. As more and more amazing fruits and vegetables are available and super fresh, I am trying to consume fewer processed foods. While I do that, I am also trying to cut back on some processed grains, easing up on my intake of wheat and rice products. I feel better, have more energy and feel good about what I am eating. No worries, I still indulge a bit. Just making sure that what I put in my body is quality.

A recent vegetable share included these massive collard greens. I’ve never cooked with collard greens before. Many of the recipes I saw online and heard about from friends was all about simple sautes. I knew that I wanted to do something different with these wonderful greens, but wasn’t quite sure what.

As I glanced at these ginormous leaves, I thought about using it as a wrap of sorts. Why not use it in place of a tortilla.

I quickly gathered up a few veggies, along with a can of black beans, and sautéed them up in a pan along with some spices.

While the veggies were sautéing, I washed, trimmed and steamed the collard green leaves.

I let the leaves cool for a couple minutes and then I laid them on a cutting board, added some of the bean mixture, and wrapped the leaves up like a burritos.

Grain Free Collard Green Burritos

  • Collard Green Leaves (1 per burrito)
  • 1 tbsp. olive oil
  • 1 onion, chopped
  • 3 cloves garlic, chopped
  • 1 red pepper, chopped
  • 8 oz. mushrooms, chopped
  • 1 can black beans, rinsed and drained
  • 2 plum tomatoes, chopped
  • 2 tsp. cumin
  • 2 tsp. salt
  • 2 tsp. pepper
  • 2 tsp. chili powder
  • 1 tsp. red pepper flakes (optional)
Instructions
  1. Wash and trim the stems off of the collard green leaves.
  2. Bring some salted water to a boil in a small saucepan and add the washed and trimmed leaves to the pot. Steam the leaves for just a few minutes.
  3. Heat up the olive oil in a large saute pan.
  4. Add the onions and garlic and saute for a few minutes.
  5. Add the rest of the ingredients and cook another 5-7 minutes. The veggies should be soft.
  6. Lay a collard green leaf on a flat surface.
  7. Place around three tablespoons of filling in the center of a leaf.
  8. Wrap the collard green around the filling, like a burrito. Folding the sides in first and then rolling up.
  9. Serve with a salad.
  10. Enjoy!

Bacon and Onion Stuffed Turkey Burgers

It may be shocking to see me posting a meat recipe. It happens once in a while. It’s grilling season. You got to cook up some burgers during grilling season!

When I do buy and cook meat, I like to know that my meat is coming from a good place. Kind of like the chicken on the Portlandia episode. Well, I’m not that intense. I do like to know though, that the animals were treated well and fed well. I prefer to only buy sustainable, pasture-raised and grass-fed meats when possible. That’s where KOL Foods comes in to play. They recently sent me some beef bacon and ground turkey. I was so excited when the meats showed up. I had a few things in mind as to what to create.

Being that July 4th, Independence Day, is almost upon us, I thought I would share a treat that’s perfect for your family barbecues. These bacon and onion stuffed turkey burgers come together fairly painlessly and you will reap the rewards with the amazing flavor.

Earlier in the day, I stepped on to my deck to pick some herbs for my burgers. I like using sage, rosemary, parsley  and thyme whenever I mix up some burger meat.

In one pan, I began to caramelize some onions and garlic. I love caramelized onions both on and in the burger.

In another grill pan, I began to fry up the bacon. Half of the bacon was reserved for garnishing the burgers, but the other half would be going in the burgers.

I let both the bacon and the onions cool a bit.

In the bacon pan, I sliced up some portabello mushrooms and grilled them.

I began to mix up my burgers. I mixed the ground turkey with chopped onion, garlic, salt, pepper, rosemary, parsley, thyme and sage. I then added some gluten free oats, vegan worcestershire sauce and an egg to the mix. I mixed everything well. If you are not gluten free, feel free to add some bread crumbs or panko crumbs instead. I wanted to keep these gluten free for me.

I formed some of the burger mixture in to a patty and then placed about a tablespoon of chopped bacon and a tablespoon of onions in the center of the formed patty. I then placed more of the burger mixture over it and sealed the bacon and onions in.

I managed to get 7 burgers out of this mixture.

I then grilled the burgers in my grill pan until done. (You can use the BBQ. It was raining that day)

I served up the burgers with additional bacon, onion, mushrooms, spinach and avocado. Oh my. That burger was amazing! You must make it!

As far as KOL Foods goes, they are amazing. I found that the meats and poultry are much more flavorful than the traditional store-bought varieties. The turkey tastes like turkey and the no-nitrite bacon was incredibly flavorful. I really loved the meats I received from them and am excited to order and cook from them again soon.   • 1 tbsp. olive oil
  • 1 tsp. salt
  • 1 large vidalia onion, sliced
  • 1 large spanish onion, sliced
  • 1 large red onion, sliced
  • 5 cloves garlic, chopped
  • 1 lb. of bacon (beef or pork) - half will be used in the burger, other half to top burger
  • 1 pound of mushrooms (portabella or baby bella), sliced
  • 2 lb. ground turkey
  • 1 tbsp. worcestershire sauce
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • 1 tbsp. fresh parsley, chopped
  • 1 tbsp. fresh rosemary, chopped
  • 1 tbsp. fresh sage, chopped
  • ½ tbsp. fresh thyme
  • 1 tsp. salt
  • 1 tsp. fresh ground pepper
  • 1 extra large egg
  • ½ cup gluten free oats or bread crumbs
  • 1 tbsp. olive oil
  • Recommended Burger Toppings:
  • Avocado
  • Bacon
  • spinach or arugula
  • caramelized onions
  • grilled mushrooms
Instructions
  1. In one pan, heat up some olive oil. Add the onions, garlic, salt and pepper. Cook on medium until the onions are caramelized. Set pan aside when done.
  2. In another pan, cook the bacon. Because the bacon is fatty, you don't need to add any oil. Cook the bacon until crisp. Drain on paper towels and set aside.
  3. In that same grill pan, grill the mushrooms until nicely browned. Set aside.
  4. Crumble up half of the bacon.
  5. In a mixing bowl, mix up the ground turkey with the fresh herbs, the egg, the oats or bread crumbs, the worcestershire sauce, salt and pepper.
  6. Form the burger in to a small patty.
  7. Place a tablespoon of the crumbled bacon and the caramelized onions in center of each patty. Top and seal with additional burger mixture.
  8. Cook burger on a barbecue or on a grill pan until done.
  9. Top with your favorite burger toppings.
  10. Enjoy!

Gluten Free Raspberry Chocolate Tart

So much about Passover, the customs and my memories – revolve around food. It goes beyond the foods that we aren’t allowed to eat. I’m always thinking about what we do and can eat. I find that the easiest part about Passover are the main and side dishes. It’s the desserts that are tough. What do you do when it seems like you can’t eat anything? We adapt. There’s always chocolate and fruit to fall back on.

Every special meal must include chocolate. I feel like that is a written rule in my book. This tart that I am sharing with you reminds me of my mom’s flour-less chocolate cake that she often serves at the seder,  along with some other chocolate treats I grew up with. One of my favorite flavor combinations is raspberry and chocolate. Growing up in Minneapolis, if someone brought the fabulous Raspberry Chocolate Torte from Gelpe’s Bakery to the house on Shabbat – everyone was happy. Another favorite that I remember as a kid, was the Raspberry Chocolate Chip ice cream from Sebastian Joe’s. All three of these fabulous treats were inspiration for this raspberry chocolate tart I am sharing with you. This tart will be served at one of our Yom Tov lunch meals, where we tend to feast on dairy. Happy to have a dairy dessert.



Gluten Free Raspberry Chocolate Tart
Ingredients:

For the crust:
2 cups almond meal
3 tbsp. butter
3 tbsp. sugar

For the filling:
1 cup raspberry jam
10 oz. dark or semi-sweet chocolate, chopped, or use good quality chocolate chips
1 cup heavy cream
1/2 tsp. salt

Directions:

For the crust:
Preheat over to 350°F.

Melt the butter.

Mix the almond meal, sugar and butter together in a small mixing bowl. It will be pretty crumbly.

Press the mixture in to a tart pan. Try to get up the sides as much as possible. I use a non-stick pan and do not need to butter or spray the pan. I would recommend buttering the pan a little if it doesn’t have the non-stick coating.

Bake the crust in the oven for about 18-20 minutes. Check to see if the crust gets too brown.

Remove the crust from the oven and cool completely.

Note: If you want to make the crust pareve, I would recommend using coconut oil in place of the butter.

For the filling:
Heat up the heavy cream in a small sauce pan. Heat it until it just starts to boil and then remove from heat.

Place the chocolate in a small mixing bowl. Pour the hot cream over the chocolate. Add the 1/2 teaspoon of salt. Let it sit for a few minutes. After a few minutes, whisk the chocolate completely. It should be shiny. It will thicken as it cools.

Warm the jam in the microwave for about 30 seconds.

Spread the jam along the bottom of the tart crust.

Pour over the ganache filling and spread evenly with spatula. Chill in the fridge to set.

Once set, garnish with some fresh raspberries.

Serve.  Enjoy!

Note: If you want to make the filling pareve, I would recommend using coconut milk or the non-dairy whipping cream in place of the heavy cream.
